A satisfying Mexican meal in half an hour? Perfect!




Ingredients:
Serves 4
  • 400g ground beef 
  • 1 can black beans or kidney beans (drained and rinsed) 
  • 1 1/2 cups Mexican Salsa
  • 3 tbsp taco seasoning 
  • 1 medium white onion, diced
  • 100g shredded cheese
  • 4 to 8 wraps (depending on how full you like them)
Directions:
Brown the ground beef with the diced onion until the meat is fully cooked. Drain the grease and then return the beef and onion back to the frying pan. Add the drained and rinsed beans, the salsa and the taco seasoning, stirring to combine. Simmer until the liquid (from the salsa) has reduced slightly, thickening the mixture. You can add salt and pepper at this point, however make sure to taste the mixture first. 

Divide the mixture between the wraps and top with the shredded cheese. Close, and toast on a grill pan for 3 minutes on each side, until the cheese has melted.
