A five ingredient pasta dish. 

Makes 4 servings
  • 125g bacon, diced
  • 250g fresh asparagus, ends trimmed and cut into 2-inch pieces 
  • 1/2 cup dry white wine 
  • 1/2 cup grated Parmesan cheese
  • salt and pepper
Heat a tbsp of oil in a pan. When hot, add the diced bacon to the pan. Cook it until it’s nice and crispy, then remove it with a slotted spoon, and leave the leftover grease in the pan. 

Add the fresh asparagus, and saut√© it in the bacon grease until it is cooked but still has a bit of bite to it. This should take about 5 minutes. Add the white wine, and give the bottom of the pan a good stir to deglaze the pan. Let the white wine boil down for a few minutes until it is reduced by about half. Once the pasta is ready, put a couple of tablespoons of the pasta water in the pan, then drain the pasta and add it to the pan, along with the cooked bacon and asparagus and half of the Parmesan. Give it a good toss, season with salt and pepper, and serve with the rest of the Parmesan.
